Diets I love this chimichurri because it doubles as a marinade and a jeweled topper for all my sides.
2 cups parsley, leaves and thin stems, checked
1 cup cilantro, checked
10 mint leaves, checked
4 cloves garlic or 4 cubes Gefen Frozen Garlic
1 red chili
1 teaspoon dried oregano
2 teaspoons Tuscanini Red Wine Vinegar or fresh lemon juice
salt
pepper
1/2 cup pomegranate arils
Process the herbs, garlic, and chili in a food processor until minced. Remove into a bowl.
Important: add rest of ingredients by hand gently (besides the pomegranate) so as to not muddle the sauce.
