Pulled Chicken Nachos

Sunday nights are often reserved for leftover Shabbos food, but sometimes I just want something fresh. I love putting a big mesh bag of chicken breasts into my soup on Erev Shabbos. When they’re soft and fragrant, I pull them out, shred them, and reserve them for Sunday night (or freeze them for a future use). There are so many ways to enjoy pulled chicken!

Directions

Prepare the Nachos

  1. Preheat oven to 435 degrees Fahrenheit. Line two baking sheets with parchment paper.

  2. Cut wraps or pitas into triangles and arrange on the baking sheets in a single layer. Spray with oil and sprinkle with seasoning.

  3. Toast in the oven for six to 10 minutes, until the edges brown. Watch closely as they can burn quickly. Set aside.

Prepare the Chicken

  1. Place the cutlets in a mesh cooking bag and add to a pot. Add the broth and bring to a boil, then reduce the flame to medium-low. Cook until tender, about 30–45 minutes, depending on the thickness of the cutlets.

  2. Remove the bag from the pot and use two forks to shred the chicken. Set aside.

Prepare the Guacamole

  1. In a bowl, mash the avocados. Add the onions, lemon juice, salt, pepper, and chili flakes. Set aside.

Prepare the Pico de Gallo

  1. In a bowl, mix the tomatoes, onions, and jalapeños. Add lemon juice, olive oil, salt, pepper, and parsley and mix again.

Assemble

  1. Lay the nachos on a serving platter in a single layer. Add the pulled chicken and dollops of guacamole and pico de gallo. Drizzle with the toppings of your choice.

Notes:

Nacho Seasoning: Some of my favorites are onion salt, chicken seasoning, or a zaatar blend.
Prep ahead: The guacamole and pico de gallo both keep well in the fridge for one to two days. Cover with plastic wrap, pressing it directly over the surface of the food, and a lid. Even better, make double batches and use them as dinner components for a few different meals.
