Salami in a salad? Yes, please! This salami mushroom salad rates 10/10 in flavor and creativity. A little different and a lot delicious!
1 pound (2 cups) salami, cubed
4 ounces canned sliced mushrooms, such as Glicks, or 1/2 pound fresh mushroom, sliced
4 potatoes, cooked and chilled
2 cups cooked peas, chilled
4 scallions, sliced
3/4 cup oil, such as Gefen Canola Oil
1/4 cup Gefen Vinegar
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons basil leaves or oregano
Place all vegetables and salami in large salad bowl.
In a separate bowl, mix vinegar, oil, and spices. Pour over salad. Toss gently.
