Ingredients

Salad

  • lettuce, chopped

  • grape tomatoes

  • cucumbers, sliced on a bias

  • avocado, cubed

  • colored peppers, sliced

  • shredded red cabbage

  • red onion, sliced

  • plantain croutons (I use Heaven & Earth)

Healthier "Nish Nosh" Dressing

  • 1 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/8 teaspoon pepper

Directions

1.

Mix the dressing ingredients in a container.

2.

Layer the salad ingredients in a bowl and drizzle with dressing.

Notes:

Feel free to add any vegetables you like to this salad — it’s so versatile!
