Love sweet salads but don’t want to add all that sugar to your dressing? By incorporating fresh fruit into the salad and blending blueberries into your dressing, you’ll enjoy a uniquely sweet and beautiful salad, all while keeping it light.
1 (6-ounce) bag baby spinach
1 avocado, cubed
1 cup diced nectarines
1 cup blueberries
1/4 red onion, sliced
1/2 cup chopped walnuts
1/4 cup Gefen Olive Oil
2 tablespoons Kedem White Wine Vinegar
2 tablespoons diced shallots
1 tablespoon Manischewitz Honey
1/2 teaspoon spicy brown mustard
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup blueberries
Prepare the dressing. Combine olive oil, white wine vinegar, shallots, honey, mustard, garlic, salt, pepper and blueberries in a jar. Using an immersion blender, blend the ingredients until smooth (you can also use a mini-chopper).
In a large bowl, combine spinach, avocado, and nectarine, blueberries, red onion, and walnuts. When ready to serve, toss with dressing.
