This salad is a hearty meal you can prepare in a pinch. The fruit adds a different element to this delicious, refreshing salad, and can easily be tossed with leftover turkey or chicken to create a yummy lunch or dinner.
1/2 cup Gefen Mayonnaise (or homemade)
1 tablespoon Gefen Lemon Juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups cooked turkey or chicken
1/3 cup slivered almonds, toasted
2 stalks celery, thinly sliced
1 cup seedless grapes
1 cup Gefen Mandarin segments
Combine mayonnaise with lemon juice and spices.
Add turkey, almonds and celery.
Stir in fruits prior to serving.
