Strawberry Rhubarb Pie (Big-Batch)

A fruit crumble with a sweet-tart filling and an oil- (not margarine-) based dough.

Ingredients

Crumb Mixture

  • 4 eggs

  • 2 cups oil

Filling

  • 4 pounds frozen strawberries

  • 4 pounds frozen rhubarb, thawed, squeezed and chopped

  • 4 tablespoons Haddar Brown Sugar

  • 3 cup sugar

Directions

Prepare the Crumb Mixture

1.

Combine all ingredients for crumb mixture. Set half aside.

2.

Of the remaining mixture, press half into the bottom of each pan.

3.

Preheat oven to 350 degrees Fahrenheit. Grease two large roaster pans.

Prepare the Filling

1.

Combine ingredients for filling. Spread over crumb layers.

2.

Bake for 30 minutes. Remove from oven, spread remaining crumbs over filling in both pans, then return to oven for 30 minutes more.

3.

Chill and cut into squares.
