Searching for unique side dishes? This recipe may just be what you’re searching for! Made easily using sliced pineapple, and mashed sweet potatoes piped over the pineapple, this is the perfect Fall recipe that may become a year-round favorite!
2 and 1/2 pounds sweet potatoes, cooked and mashed
juice of 1 orange
juice of 1 lemon
1/4 teaspoon salt
1 tablespoon sugar
1 can Gefen Pineapple slices
Combine sweet potatoes with juices, salt and sugar. Mix well.
Place pineapple slices on lined cookie sheet. Place a scoop of sweet potato mixture over each pineapple slice, or pipe out of pastry bag onto pineapple.
Bake for 45 minutes at 400 degrees Fahrenheit.
