Yummy and delicious, this sweet tropical chicken dish is a great alternative to the fried stuff when you’re craving a pineapple chicken. Super simple and quick to put together, the chicken is moist and has gorgeous color. Serve with plain rice or a nice big salad.
1 chicken, quartered
1/2 cup Mishpacha Flour (optional)
1 onion, sliced
10 ounces Gefen Crushed Pineapple
1/2 cup brown sugar
1 cup Heaven & Earth Ketchup or 8 ounces tomato sauce
1/2 cup water
If desired, dip chicken into flour and fry in oil until golden brown.
Arrange onion rings into 9×13 inch pan. Place chicken over onions. Combine remaining ingredients and spread onto chicken.
Bake, covered, at 400 degrees Fahrenheit for two hours, and uncovered for an additional 15 minutes. Sauce makes a delicious gravy for rice or farfel, etc.

I originally saw this recipe in their blue Simcha cookbook a number of years ago (I think before iPhones or any phones with internet connection were around for common use!). I’m using this recipe a number of years BH as one of my Shabbos & YT chicken dishes. AMAZING taste & flavors & VERY easy & quick to make & VERY quick & easy to clean up post preparation.
