I don’t bake. Really, I don’t. Instead, I raid my daughter’s freezer (with permission!).
I had some of these muffins over Succos, and they were just yum!
She baked a double batch to give me precise instructions for the recipe and had to hide one for me to taste before they were all gone. Yes, they’re that good!
Yields 25 muffins
2 bananas, mashed (or blended for a creamier texture)
2 cups flour (I use 80% whole wheat)
1 and 1/2 cups sugar
1/2 cup oil, such as Manischewitz Grapeseed Oil
2 eggs
1/4 cup orange juice
1 teaspoon Gefen Vanilla Extract
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
3/4 cup Glicks Chocolate Chips (optional)
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Mix all ingredients with a hand blender or fork. Pour into a muffin pan. Bake for 15–20 minutes, or until light brown. Enjoy!
