This is a yummy recipe for grilled chicken cutlets. The good part is that it does not need to be marinated either. The tomatoes can be omitted but are definitely worth adding – they add such delicious flavor. I hope you enjoy it as much as my family does.
4 chicken cutlets, flattened
1/2 cup Gefen Mayonnaise (lite mayo also works fine)
2 teaspoons mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
2 tomatoes, thinly sliced (optional)
Mix mayo, mustard, salt, black pepper and garlic powder in a bowl. Smear onto flattened chicken cutlets. Sprinkle with basil on both sides.
Optional: wrap thinly sliced tomatoes around the cutlets as a crust.
Grill three to four minutes per side or until a meat thermometer measures at least 165 degrees Fahrenheit (74 degrees Celsius) internally.
