This recipe works well with a variety of white fish. Here I used tilapia, but sole, turbot and halibut are all excellent substitutions. I make it in an oven-to-tableware dish and serve it straight from the oven, still in the baking dish.
4 tilapia fillets
3/4 cup tomato paste
1/2 cup mayonnaise (low fat is fine)
2 teaspoons MSG-free onion soup mix
1 tablespoon brown sugar
1 tablespoon dried basil
1/2 teaspoon freshly ground black pepper
Preheat oven to 400 degrees Fahrenheit.
Place the fish in a deep baking dish. Mix all the ingredients for the sauce in a bowl. Spread generously over fish.
Bake uncovered for 35 to 40 minutes. Serve warm.
