3 tomatoes, peeled
1 pepper
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
1 jalapeño pepper (see note)
1/2 red onion, chopped
fresh squeezed lemon juice or Heaven & Earth Lemon Juice
cilantro to taste
BPA free canned or tetra packed beans or chickpeas, such as Tuscanini Chickpeas (optional, to make this a full meal)
Chop all ingredients into small pieces.
Squeeze fresh lemon on top.
Mix.
Best served after it sits a little.
