This easy marinated tomato salad embraces fresh parsley and is sugar free. Hands-on prep time is minimal, and the tomato toss can sit in the fridge for a while, making it a great option to have on hand for busy families whose members are coming and going at all hours.
4 large tomatoes, peeled and sliced
1 tablespoon chopped fresh parsley
1 clove garlic, crushed
6 tablespoons Gefen Olive Oil
2 tablespoons vinegar (use gluten-free, if needed)
1 teaspoon salt
1/3 teaspoon pepper
Combine all ingredients, mixing well.
Cover and chill for three hours or overnight.
