Very hearty one-pot meal. Serve with chunks of turkey removed from the wings.
2 turkey wings
2-3 onions, sautéed until brown or 1-1 and 1/2 cups Haddar Sauteed Onions
5 stalks celery, sliced
5 carrots, cut in half and sliced
plenty of salt
7 ounces barley, such as Glicks Pearl Barley
Boil the turkey in water a few minutes. Skim off the scum.
Add all ingredients in a five- to six-quart pot. After three hours of cooking check if thick. If not, continue cooking until it thickens. (Barley soups are usually thicker a day after cooking.)

Made a much smaller quantity but it was delicious.
