Vegetable and Cheese Skewers with Balsamic Vinaigrette

Whether for shalosh seudos or any dairy meal, these skewers look beautiful, but don’t require too much effort. Yield: 20 skewers

Ingredients

Skewers

  • 2 cucumbers, peeled and cut into 1-inch squares

  • 4 ounces red cherry tomatoes, halved

  • 4 ounces yellow cherry tomatoes, halved

  • 8 ounces feta cheese, cut into 1-inch squares

  • 8 ounces fresh mozzarella cheese, cut into 1-inch squares  

Dressing

Directions

Prepare the Dressing

1.

In a blender (you can also prepare this in a bowl and use an immersion blender), combine vinegar, brown sugar, garlic, salt, and pepper. Pulse to combine.

Slowly add in olive oil, blending until dressing is emulsified.

To Serve

1.

Thread cheeses and vegetables onto six-inch skewers (as shown).

2.

Pour one tablespoon dressing into individual shot glasses. Stand a skewer in each shot glass.

Notes:

To keep the feta cheese from falling apart when you thread it onto the skewers, press your fingers onto both sides of the cube.

I love the balsamic vinaigrette in this recipe!! I make a big batch and store it in a container in my fridge and use it on almost every salad I make!! It pairs especially well with fresh mozzarella.
