Whether for shalosh seudos or any dairy meal, these skewers look beautiful, but don’t require too much effort. Yield: 20 skewers
2 cucumbers, peeled and cut into 1-inch squares
4 ounces red cherry tomatoes, halved
4 ounces yellow cherry tomatoes, halved
8 ounces feta cheese, cut into 1-inch squares
8 ounces fresh mozzarella cheese, cut into 1-inch squares
1/4 cup Tuscanini Balsamic Vinegar
1 tablespoon dark brown sugar
1 tablespoon minced garlic or 3 cubes Gefen Frozen Garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground Gefen Black Pepper
3/4 cup Gefen Olive Oil
In a blender (you can also prepare this in a bowl and use an immersion blender), combine vinegar, brown sugar, garlic, salt, and pepper. Pulse to combine.
Slowly add in olive oil, blending until dressing is emulsified.
Thread cheeses and vegetables onto six-inch skewers (as shown).
Pour one tablespoon dressing into individual shot glasses. Stand a skewer in each shot glass.

I love the balsamic vinaigrette in this recipe!! I make a big batch and store it in a container in my fridge and use it on almost every salad I make!! It pairs especially well with fresh mozzarella.
