Diets Cereal is a breakfast staple, but you can level up with some Greek yogurt and sautéed fruit. I chose apples, the mascot of the fall season, but feel free to substitute with any cut-up fruit of your choice. Enjoy your favorite whole-grain cereal on top for that perfect crunch! (The parfait is best when assembled fresh, but you can sauté the apples in advance.)
sauteed apples (see below)
Greek yogurt
Cheerios or another whole-grain cereal of your choice
2 tablespoons butter or margarine
3 medium apples of your choice, diced small (I prefer Granny Smith)
3 tablespoons sugar
2 teaspoons Gefen Vanilla Extract
2 teaspoons Tuscanini Lemon Juice
1 teaspoon Gefen Cinnamon
Melt butter in a pan, then add in the apples and remaining ingredients. Cook for 10 to 12 minutes until soft.
Set aside to cool before assembling the parfait or store in the fridge for later use (they keep for up to a week).
Spoon sautéed apples on the bottom of a cup. Add in yogurt and the cereal. Repeat for an additional layer if desired.
