Diets Looking for a healthier zucchini muffin? Look no further! These zucchini muffins pack a punch with their array of healthy ingredients and great taste! Very easy to make by hand or using a mixer, this recipe will yield two dozen muffins that also happen to freeze beautifully. Enjoy them all now or stick them in the freezer to grab for an easy snack on the go!
1 and 3/4 cups flour
2 tablespoons oat bran
2/3 cup Shibolim Whole Wheat Flour
1 cup sugar
1/2 cup oatmeal
1 tablespoon Haddar Baking Powder
pinch of salt
1 teaspoon Gefen Cinnamon
3/4 cup ground walnuts
4 eggs
10 ounces grated zucchini
3/4 cup oil
Combine all ingredients, mixing until just combined.
Fill cupcake cups with batter three-fourths full.
Bake for 18–20 minutes.
Preheat oven to 375 degrees Fahrenheit.
Yields 24 muffins
