Zucchini chocolate chip muffins! The perfect healthier breakfast (or snack) muffin! Trust me, these are incredible.

Ingredients

Main ingredients

  • 2 large eggs

  • 1/4 cup sugar

  • 1/3 cup brown sugar

  • 2 teaspoons Gefen Vanilla Extract

  • 3 cups (packed) grated fresh zucchini

  • 1/4 cup coconut oil

  • 1/4 cup canola oil

  • 2 and 3/4 cups flour (I used a combination of whole wheat and gluten free flour)

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 teaspoons (optional: plus 2 teaspoons) cinnamon

  • Glicks Chocolate Chips or chocolate chunks

Directions

Prepare the Muffins

1.

Preheat oven to 350 degrees Fahrenheit.

Mix the first seven ingredients (all the wet ingredients). Then add in the dry and lastly the chocolate chips.

3.

Right before placing them in the oven, sprinkle an additional two teaspoons cinnamon on top, if desired. Bake for 20–30 minutes till golden. Enjoy!
