Healthy GF Mini Pancakes

Healthy Gluten Free Mini Pancakes 
 1 cup oat flour
 1 cup almond flour
 1 tablespoon honey
 1 tablespoon baking powder
 1/4 teaspoon salt
 1 cup whole milk (or almond milk)
 1 and 1/2 tablespoons safflower oil
 2 large eggs
 1/2 teaspoon vanilla (optional)
