Caramelized Leek and Potato Soup
6 large leeks
8 tablespoons Tuscanini Light Olive Oil
1 medium Spanish onion, finely chopped
8 cloves garlic, chopped
12–14 potatoes, peeled and diced
8 cups chicken stock, divided
4 cups water
2 bay leaves in a mesh bag
1 sprig fresh thyme, in a mesh bag
4 teaspoons Haddar Kosher Salt
1/2 teaspoon Gefen White Pepper
4 marrow bones
1 pound boneless flanken

Leeks must be checked for insects before using, according to CRC and Star K and others. It should be mentioned at least that when he was washing the leeks, he was also checking for insects, in case some are not aware that to be ‘kosher’, it has to be ‘bug-free’. Thanks for a great site!
