Crispy Potato Fritter Latkes
Latkes are delicious, but they can also be oily and heavy. Chef
Gabe is fixing that with these incredible fritters. Mixing sweet potato,
potato, and onion with Pâte à choux dough is just the kind of genius
idea to take your latkes to the next level. It’s never too early to
start experimenting!
Latke Fritters
3/4 cup water
1/2 stick margarine
1/4 teaspoon salt
1/2 teaspoon sugar
3/4 cup all-purpose flour
4 eggs
1 Russet potato
1 sweet potato
1 tablespoon onion flakes
1 tablespoon tarragon, chopped
1 tablespoon chives, chopped
1 teaspoon salt
1 teaspoon pepper

Love the clear and concise explanations. I usually find latkes underwhelming but this recipe is outstanding! It elevates latke to the point where I enjoy eating it and even crave it. The recipe is a keeper!
