Cookie Dough Protein Balls with Vanilla Maple Ice Cream

Kid-friendly, allergy-friendly, and oh-so-delicious, this recipe is everything you want in a snack, and nothing that you don’t. Rorie recommends sneaking in collagen powder to add some protein no one will know about! Plus, the extra protein balls can be repurposed as chunks in your cookie dough ice cream, although we don’t think your kids will leave any over!

Directions

Prepare the Cookie Dough Protein Balls

  1. Place all ingredients in a medium bowl and mix to combine. Form into 28 small balls (see note). Dip each ball into additional coconut flakes if desired.

  2. Place in the freezer until firm.

Prepare the Vanilla Maple Ice Cream

  1. Using a blender, combine all ingredients.

  2. Add mixture to an ice cream maker and prepare according to machine directions. Alternatively, if you don’t have an ice cream maker, after combining ingredients in the blender, freeze mixture in ice cube trays, then blend the frozen cubes in a high-speed blender, such as a Vitamix.

  3. Gently stir cookie dough protein ball minis or chunks into the creamy ice cream. Freeze.

Notes:

To use in ice cream, either prepare mini balls or make standard-size balls and cut them in quarters.

what can I use if I don't have an ice cream machine?

I make the balls as an energy ball for a quick snack. We are addicted to them! I was wondering if there a substitute that Rorie recommends that can be used for the flaxseed, which is kitniyos.

(p.s. i use shredded coconut in the balls, instead of the flakes. we like it much better.)

do u have to use an icecream machien rather than putting in the freezer?

Yes, you do have to use one if you want it to become soft like ice cream, since it whips air into it. If you just freeze it it'll become hard as a rock.

I just saw this was asked before, but I didn't see a clear answer. Is there a substitute for the coconut flakes in the cookie dough? You mentioned there wasn't a substitute for the coconut cream, but what about the flakes? Thank you.
