This is a copycat recipe based on the famous barbecue chicken pizza by the California Pizza Kitchen. It can be made pareve with soy chicken strips or as a meat version; just be mindful to use a meat oven for a meat pizza.

Directions

  1. In a large skillet, heat oil over medium heat. Add onions and cook for about two minutes. Add salt and pepper and continue cooking until browned, around 15 minutes.

  2. If using a pizza oven, preheat according to manufacturer’s instructions. If using a regular oven, preheat to 375 degrees Fahrenheit.

  3. Roll out dough to desired thickness. Spread barbecue sauce over it and add prepared onions and chicken.

  4. Bake 12 minutes in a pizza oven, rotating every four minutes for even cooking, or bake for 20–25 minutes in a regular oven until crust is lightly toasted.

  5. Top with arugula, drizzle with spicy mayo and serve.
