Yes, you can leave out the chia seeds. The energy bites may be slightly softer without them, so if the mixture feels too sticky to form into balls, you can add a little extra oats as needed.

Yes. Old-fashioned oats provide a chewier, heartier texture, while quick oats, are smaller and create a smoother, more uniform, and softer result.
