These energy bites are much easier than most, with just a handful of pantry ingredients plus one secret ingredient: pourable, healthy mixed nut butter. Made with nothing but cashews and almonds, it’s got less fat, sodium, and sugar than peanut butter, and it’s so much easier to use. Yields 10 balls
1/2 cup Haddar Mixed Nut Butter
1/4 cup Gefen Honey (or maple syrup)
1/2 teaspoon vanilla extract
1 and 1/2 cups oats (rolled or quick-cooking, gluten free if needed)
1/4 cup chopped nuts (e.g., almonds, walnuts, pecans)
1/2 teaspoon Gefen Cinnamon
1/4 teaspoon salt
In a medium bowl, add nut butter, honey, and vanilla extract; stir together.
Add oats, chopped nuts, cinnamon, and salt and mix with a spoon. If needed, finish bringing the mixture together with gloved hands. Add optional add-ins to taste (see notes).
Roll the mixture into bite-size balls.
Chill or enjoy at room temperature.
