20 soft Medjool dates, such as Beleaves, pitted
4 tablespoons Gefen Almond Butter or peanut butter
3/4 cup–1 cup cashews, pecans, or mixed chopped nuts
1/2 cup–3/4 cup hemp seeds
4 tablespoons raw sunflower seeds
2 tablespoons raw pumpkin seeds
3/4 cup raw cacao nibs or chocolate chips
1/4 cup cacao powder (raw cocoa) or regular cocoa powder
1/4 cup organic or regular cocoa powder
1 tablespoon Gefen Pure Vanilla Extract
2 teaspoons raw maca powder (optional)
In a food processor fitted with the knife blade, pulse dates, almond butter, nuts, hemp seeds, sunflower seeds, pumpkin seeds, cacao nibs, cacao powder, organic cocoa powder, vanilla extract, and maca powder (if using) until nuts and seeds are the size of small pebbles.
Roll mixture into balls the size of walnuts and store in the freezer.
