Prepare the Onion Kugel
In a large pan on low flame, cook diced onions with oil salt, pepper, and brown sugar for one and a half to two hours. Drain oil when done and let cool (can also stay in fridge overnight).
Preheat the oven to 350 degrees Fahrenheit. Grease a round or oval oven-to-table dish.
Flour your surface and roll out the pastry dough.
In a bowl, mix egg into the cooled onions and spread down the center of the puff pastry sheet, lengthwise. Carefully roll up the dough.
Lay the roll in a spiral shape inside the oven-to-table dish. Place pearl onions in any open spots and cover with any leftover pastry dough.
Brush the top of dough with beaten egg yolk and sprinkle with minced onion and sesame seeds.
Bake for approximately an hour to an hour and a half or until golden brown.

This kugel is insanely delicious! Totally worth the time toy takes to get the onions cooked down and 100% worth my house and everyone and everything in it smelling like onions! The onions are SO flavorful and the puff pastry is the perfect pairing (I did use a yeast dough once when I ran out of puff pastry and that was great too!) !
I love it when it’s burning hot right out of the oven, warm on Friday night, and even cold on Shabbos Day (along with some mustard! Yum!)
it’s one of those recipes that’s worth the time and effort because the results definitely pay off!
