Cinnamon-Apple Sweet Noodle Kugel

The pairing of warm caramelized apples and cinnamon spice, with a homey sweet noodle kugel, is just wonderful. Serve these as individual kugel cups, or if you’re looking for a faster bake, use a round silicone baking mold and increase the cook time (45 to 60 minutes).

Makes about 24 individual cups

Easy Vegetarian Pescatarian Gluten Free Passover Parve

Contains: Egg

Directions

Prepare the Caramelized Apples

  1. In a small saucepan, add the water and sugar. Cook until the sugar dissolves and turns a light amber color (five to seven minutes), then add the vegan butter or margarine.

  2. Stir constantly until the mixture turns a creamy light brown color, and add the sliced apples.

  3. Stir to coat all the apples in caramel and let cook till softened, about 15 minutes. Set aside.

Prepare the Noodle Kugel

  1. Heat up a pot of water till boiling and add one teaspoon salt. Pour in a package of Manischewitz egg noodles and let cook until soft, about 13 minutes. Drain.

  2. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  3. In a large bowl, add the eggs, oil, sugar, vanilla sugar, cinnamon, and nutmeg. Mix to combine. Add the drained egg noodles and mix once again.

  4. Place silicone muffin liners in a muffin tray or oil a silicone muffin tray (it’s easiest to pop the kugel cups out of silicone!).

  5. Lay a few apple slices in the bottom of each muffin cup and fill to the top with noodle kugel mix.

  6. Bake for 20 to 25 minutes, until set. Let cool slightly before popping out of the muffin trays.

  7. Serve warm with a dusting of cinnamon.

Well here they are... just out of the oven.  I guess I was a little sloppy in loading the cups... Lots of spillage visible - but overall, they look delicious.  Can't wait until they cool off so I can try one!   Next time I will load cups neater and more evenly I think.

Thanks so much (Raquel) for your prompt response.  Once cooled, I will remove from silicone tray and pack up for the freezer.

I plan on making this recipe today (Thu 9/10) - with regular noodles.  Rosh Hashana starts Friday night.  I would like to serve them on Sunday (2nd day of Rosh Hashana).   Do they freeze well - or do you think it is better to just keep them in the frig for 3 days?

These should freeze well! Since you’re making them on Thursday and not serving until Sunday, we recommend freezing them once they are completely cooled rather than keeping them refrigerated for three days. Defrost and reheat before serving, and they should still be delicious. Enjoy!
