The Ultimate Meal Train Delivery: A Schnitzel Sandwich Bar with Love from Esty Wolbe

When a friend of mine recently had a baby, I wanted to send her something special. So I asked her, “What’s your favorite meal to get?”—because if I was going to cook, I wanted to make something that would really hit the spot.

Her answer surprised me: a schnitzel sandwich.

At first, I thought—wait, that’s it? But the more I thought about it, the more I realized: it’s kind of genius. You’ve got protein, carbs, toppings, sauces—all the components of a customizable, crowd-pleasing meal. It’s perfect for a family with kids because everyone can build their sandwich exactly how they like it.

So I decided to create a Schnitzel Sandwich Bar To-Go—my version of the ultimate meal train delivery.

Less Mess, More Crunch

Let’s be honest: breading schnitzel can make a mess. And I really didn’t feel like doing extra dishes. One of my favorite tricks is setting up my dredging station using foil only. No bowls to wash, no crumbs all over the counter.

I lay out a large piece of foil, then used a smaller piece to create a little “bowl” for the egg. Place that bowl on the larger sheet of foil, and add panko to one side, and flour to the other. I season it all right there and get to work using the wet-hand/dry-hand method.

It works beautifully—and cleanup is just rolling up the foil and tossing it.

A Few Thoughtful Add-Ons

Once the schnitzel is frying, I get to work on the little extras that turn a simple meal into a complete package. First, French fries (because what’s schnitzel without them?). Then baguettes, sautéed onions, red onion, lettuce, sliced tomatoes, pickles, and all the sauces.

And finally, something just for mom: my peanut butter oat energy bites. They’re packed with oats, honey, chia seeds, and peanut butter—a perfect snack for those late-night feedings or when you’re rummaging through the pantry the next day.

Packed With Love (and Toppings)

I pack it all up carefully—baguettes, schnitzel, fries, toppings, sauces, and energy bites. Because when you’re making a meal train delivery, it’s not just about filling a stomach. It’s about giving someone a moment of relief, joy, and a bit of fun.

And the best part? Seeing how excited the kids were to build their own sandwiches and hearing the mom say, “This is the best dinner I ever got. Just saying.”

That’s why I love making meals like this. They’re simple, thoughtful, and filled with heart.

So the next time you’re cooking for a friend who just had a baby, consider the schnitzel sandwich bar. It might not be what they expect—but it just might be exactly what they need.
