When a friend of mine recently had a baby, I wanted to send her something special. So I asked her, โWhatโs your favorite meal to get?โโbecause if I was going to cook, I wanted to make something that would really hit the spot.
Her answer surprised me: a schnitzel sandwich.
At first, I thoughtโwait, thatโs it? But the more I thought about it, the more I realized: itโs kind of genius. Youโve got protein, carbs, toppings, saucesโall the components of a customizable, crowd-pleasing meal. Itโs perfect for a family with kids because everyone can build their sandwich exactly how they like it.
So I decided to create a Schnitzel Sandwich Bar To-Goโmy version of the ultimate meal train delivery.
Less Mess, More Crunch
Letโs be honest: breading schnitzel can make a mess. And I really didnโt feel like doing extra dishes. One of my favorite tricks is setting up my dredging station using foil only. No bowls to wash, no crumbs all over the counter.
I lay out a large piece of foil, then used a smaller piece to create a little โbowlโ for the egg. Place that bowl on the larger sheet of foil, and add panko to one side, and flour to the other. I season it all right there and get to work using the wet-hand/dry-hand method.
It works beautifullyโand cleanup is just rolling up the foil and tossing it.

A Few Thoughtful Add-Ons
Once the schnitzel is frying, I get to work on the little extras that turn a simple meal into a complete package. First, French fries (because whatโs schnitzel without them?). Then baguettes, sautรฉed onions, red onion, lettuce, sliced tomatoes, pickles, and all the sauces.

And finally, something just for mom: my peanut butter oat energy bites. Theyโre packed with oats, honey, chia seeds, and peanut butterโa perfect snack for those late-night feedings or when youโre rummaging through the pantry the next day.
Packed With Love (and Toppings)
I pack it all up carefullyโbaguettes, schnitzel, fries, toppings, sauces, and energy bites. Because when youโre making a meal train delivery, itโs not just about filling a stomach. Itโs about giving someone a moment of relief, joy, and a bit of fun.
And the best part? Seeing how excited the kids were to build their own sandwiches and hearing the mom say, โThis is the best dinner I ever got. Just saying.โ
Thatโs why I love making meals like this. Theyโre simple, thoughtful, and filled with heart.
