6 eggs
1 large sweet potato or 2 small ones
3 green onions, checked
salt
pepper
avocado oil or other neutral oil, to spray
Preheat your oven to roast at 375 degrees Fahrenheit. Spray a nine-inch pie pan with avocado oil or oil of your choice.
Peel and dice your sweet potatoes. Spread them out in the pan and give them another spray all over. Season with salt and pepper.
Place in the oven to roast for about 20 minutes (depending on your oven).
Meanwhile, slice and dice your green onions.
Crack your eggs and beat them in a separate bowl.
Once your sweet potato is roasted, cover it with the beaten eggs, the green onion, and additional salt and pepper.
Place the pan back in the oven for 15 minutes until the edges are brown and separate a bit from the sides of the dish.
