This thick, hot, after-dinner drink has the goodness of traditional hot chocolate without the dietary complications that Acid Watchers need to avoid. You’ll need a small double boiler and a whisk to make the mixture silky smooth. If you don’t have a double boiler, you can improvise by placing a glass bowl over a pot of boiling water. Make sure the water doesn’t come up to the bowl and that the bowl fits snugly over the pot so it doesn’t wiggle around as you whisk. You won’t miss chocolate once you get a taste of this hAWt ChAWcolate!
1/3 cup carob chips
1 cup coconut milk
1 tablespoon carob powder
1/4 teaspoon Gefen Vanilla Extract
1/4 teaspoon Gefen Cinnamon
Bring water to a gentle boil in the bottom of a double boiler. Reduce the heat to medium-low.
Combine all of the ingredients in the top of the double boiler and continually whisk the mixture, as the carob chips melt, for four to six minutes. Serve immediately.
