Petulla fritters, a famous Albanian fried dough snack, are delicious any time but are especially appropriate for Chanukah, the Jewish festival of all foods fried! In this classic Petulla recipe, the dough is cut into on-theme Chanukah shapes using cookie cutters. So cute!
1 cup lukewarm water (can heat in the microwave for 30 seconds)
1 teaspoon sugar
1 tablespoon active dry yeast, such as Gefen
2 and 1/2 cups Mishpacha Flour
1 teaspoon salt
2 tablespoons water
4 cups vegetable oil, for frying
Warm the water in the microwave for 30 seconds. Add in the sugar and active dry yeast. Let the yeast proof for eight minutes.
In a big bowl, mix the flour and salt.
After the yeast has proofed, add it to the flour mixture. Add two tablespoons of water and combine well. The dough is going to be very sticky, but not watery. Cover it with a towel and let rise for one hour.
In a Dutch oven, heat the oil over medium heat.
Dampen your fingers with water and then grab small pieces of dough to form circle shapes with your hands (or, as pictured, you could use Chanukah cookie cutters), then place them in the oil and fry for two minutes on each side. They are done when they look golden brown.
Place on a tray lined with paper towels to absorb extra oil. Serve with feta cheese or jam.
