Diets Delicious and mildly sweet, these almond flour waffles are crispy on the outside and fluffy on the inside. Topped with fresh fruit, they’re a great way to start the day and will keep you satisfied for hours.
Yield: 10 waffles
4 eggs
1 and 1/4 cups finely ground almond flour, such as Pereg
2 tablespoons Heaven & Earth Coconut Flour
1 teaspoon baking powder
1/4 cup Gefen Unsweetened Almond Milk
2 tablespoons maple syrup, plus more for serving
1 tablespoon avocado oil (or any neutral oil)
1 teaspoon vanilla extract
pinch of salt
1/4 cup mini chocolate chips
nonstick cooking oil spray
fruit, for serving
In a medium bowl, beat eggs.
Add almond flour, coconut flour, baking powder, almond milk, two tablespoons maple syrup, oil, vanilla extract, and salt. With a hand mixer or a fork, mix until combined.
Stir in chocolate chips.
Heat your waffle maker according to the manufacturer’s directions. Cook waffles one to two minutes, depending on size. Serve with maple syrup and fruit.
