My favorite way to make shnitzel, the shortcut way! During Passover I use this breading, which reminds me of seasoned cornflake crumbs. Make a few batches in advance to have on hand. It’s that good!
2 pounds chicken breast, cubed
2 tablespoons olive oil
1 cup Gefen Almond Flour
1 tablespoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
pinch black pepper
cooking spray
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet wtih parchment paper.
Place chicken on the baking sheet, drizzle with olive oil, and toss to coat chicken in the oil.
In small bowl mix together the almond flour and spices. Shake half of the almond flour mixture over the cubed chicken and toss to coat. Toss again with the remaining crumbs.
Spread the chicken onto the pan in one layer and spray the top with baking spray. Bake for about 20 minutes, until golden and crispy. You may need to toss once during baking depending on your oven.

Why did all the crumbs Coe off of mine? doesn’t look like schnitzel at all.

Yes, Freeze them raw.
Just made for chol hamoed supper with mash potatoes. Came out absolutely delicious. I didn’t add the basil though. I would make this even during the year.
