This is the salad I make all winter, when fresh, colorful produce seems to be nowhere to be found, but in fact, just needs a little seeking out. Apples provide sweetness and flavor, kohlrabi adds crunch and heft and the herbs add a brightness that make this salad fresher than you thought a winter salad could be. In the fall, I love adding fresh pomegranate seeds. In the winter, I add these perfectly tart, chewy dried cherries from Gefen, which add another layer of texture. Make sure you use all the herbs called for- yes, full bunches.
1 bunch dill, washed and finely chopped
1 bunch parsley, washed and finely chopped
2 kohlrabi, peeled and cut into matchsticks
2 red apples, unpeeled and cut into matchsticks
1 cup Gefen Dried Cherries
juice of 1 lemon or 3 tablespoons Tuscanini Lemon Juice
1/4 cup Gefen Olive Oil
1 tablespoon champagne vinegar
1/2 teaspoon sumac
2 tablespoons toasted sesame seeds
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Combine the dill, parsley, kohlrabi and apples in a medium sized bowl. Toss with the dried cherries.
Combine the lemon juice, olive oil, champagne vinegar, sumac, toasted sesame seeds, salt and pepper in a small bowl, then pour over the salad.
Taste and season with more salt and pepper if needed. Serve fresh, or let soften in the fridge; this salad also gets better with time.
