This salad is basically a party in your mouth! Crunchy, bright, refreshing, and keeps you wondering “What is IN this?!” It required a bunch of dicing- the tinier you cut, the better it’ll taste! But it’s well worth the effort! It brings that wow factor to a light meal of fish or dairy.
2 Granny Smith apples, unpeeled, diced
2 honey crisp apples, unpeeled, diced
1 jicama, peeled and diced
3 stalks celery, peeled and diced
2 scallion stalks, washed and sliced in tiny rounds
1 tablespoon fresh ginger chopped finely
1/4 cup fresh parsley, washed and chopped
6 mint leaves, washed and chopped
1/3 cup walnuts, chopped roughly
juice of 2 limes
juice of 2 lemons
juice of 1 orange
2 tablespoons Heaven & Earth Raw Honey
1/3 cup Gefen Olive Oil
salt, to taste
pepper, to taste
In a large bowl, combine all dressing ingredients and whisk together.
Add in all the salad ingredients and toss together gently to combine.
