Ingredients

Salad

  • 2 Granny Smith apples, unpeeled, diced

  • 2 honey crisp apples, unpeeled, diced

  • 1 jicama, peeled and diced

  • 3 stalks celery, peeled and diced

  • 2 scallion stalks, washed and sliced in tiny rounds

  • 1 tablespoon fresh ginger chopped finely

  • 1/4 cup fresh parsley, washed and chopped

  • 6 mint leaves, washed and chopped

  • 1/3 cup walnuts, chopped roughly

Dressing

Directions

1.

In a large bowl, combine all dressing ingredients and whisk together.

2.

Add in all the salad ingredients and toss together gently to combine.
