This amazing apple kugel is the perfect addition to any Shabbat or Yom Tov meal, especially Rosh Hashana. Simple to make, the kugel cuts very nicely, held together by the moist batter. The addition of the cinnamon-sugar is the perfect topping to this traditional favorite.
1 stick margarine
1 cup sugar
2 eggs
1 and 1/2 cups flour
4 green apples, peeled
4 Cortland or McIntosh apples, peeled
cornflakes
1/8 teaspoon cinnamon, or more to taste
1 cup sugar, or more to taste
Put margarine, sugar, eggs and flour into mixer and blend thoroughly.
Slice apples thinly.
Mix apples in a large bowl with fork, until they are slightly crushed. Add batter to apples and combine.
Pour into a 9 x 13-inch or two nine-inch round pans. Coat with corn flakes.
Combine cinnamon-sugar mixture and sprinkle over corn flakes.
Bake, uncovered, at 350 degrees Fahrenheit for one hour.
