Diets I always like to have something sweet at the Purim seudah, and this is the perfect dish. This recipe, from my good friend Esti Lamm, yields a smaller kugel, which is great when I’m not having guests, but you can easily double or even triple it so you have for Shabbos and again at the Purim seudah the next day.
2 large apples, peeled and sliced
1 cup Glicks Flour
1/2 teaspoon baking powder
1/2 cup oil, such as Gefen Canola Oil
3/4 cup sugar
3 eggs
1 teaspoon Gefen Cinnamon
1 teaspoon vanilla extract
zest of 1 lemon (optional)
juice of 1 lemon (approximately 2 tablespoons)
Spray an oven-to-table baking dish with oil spray. Place sliced apples in the dish and set aside.
In a mixing bowl, using a whisk or wooden spoon, mix the rest of the ingredients. Pour batter over apples.
Bake at 350 degrees Fahrenheit for 45 minutes to one hour.
