Apple Muffins with Granola Crumble

The granola topping blends beautifully with the apple surprise in this superb muffin. I prefer a subtle apple flavor, but feel free to double the filling.  

Yield: 14 medium-sized muffins

Ingredients

Muffins

  • 6 eggs

  • 1 and 1/2 cups sugar

  • 1 cup oil

Filling

  • 1 large McIntosh apple, coarsely grated

  • 1/4 cup brown sugar

Crumble

  • 1 tablespoon margarine, softened

  • 1/4 cup rolled oats

  • 1/4 cup Demerara sugar

  • 1/2 cup pecans, crushed (see note)

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Grease muffin tins.

In a small bowl, combine filling ingredients.

In another small bowl, combine crumble ingredients.

In a large mixing bowl, combine all muffin ingredients and mix until smooth. Fill muffin tins one-third of the way.

5.

Place one tablespoon of filling over batter. Cover with batter. Sprinkle crumble over batter and bake for 30 minutes.

Notes:

If you do not use nuts in Tishrei, you an replace the pecans with dried cranberries.
