Diets These are perfect with tea in your sukkah. Makes about 20 cookies.
2 cups flour
1 and 1/2 sticks margarine (3/4 cup)
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup Gefen Confectioners’ Sugar
Add all ingredients to a bowl of a standing mixture and mix until the dough forms a cohesive ball.
Refrigerate for an hour.
Roll out dough to half an inch thick. Using a pastry cutter, cut out four-inch circles.
Put one teaspoon of apple butter in each round, then fold over and pinch closed. Don’t worry if the dough splits or some apple butter escapes. It will just add to the rustic charm.
Bake at 350 degrees Fahrenheit for 15 minutes until the bottoms of the cookies are golden brown. Let cool and sprinkle with confectioners’ sugar.
