Apple turnovers can be made as adorable “minis.” Just cut smaller dough squares and of course, use less filling in each one. They look especially attractive on a tiered serving dish with other miniatures.
1 package 5-inch pastry dough squares
3 large Cortland apples
2 teaspoons Heaven & Earth Lemon Juice
1 cup sugar
2 tablespoons Gefen Cornstarch
1/2 to 3/4 teaspoon Gefen Cinnamon
3/4 cup Gefen Confectioners’ Sugar
1 tablespoon oil
1 to 2 teaspoons boiling water
Semi-defrost pastry dough.
Peel and cube apples and place in a two- to four-quart pot.
Add lemon juice and rest of filling ingredients to pot. Stir over low to medium heat for approximately 20 minutes. Cool.
Lay dough squares on a cookie sheet. Place a little more than one tablespoon of filling on each square. Fold over. Press down edges with the tines of a fork.
Brush with egg yolk. Bake on cookie sheet at 350 degrees Fahrenheit for 20 minutes or until golden brown. Cool.
Mix glaze ingredients and drizzle over turnovers.
