Super easy and delicious salad. Great way to use up leftover chicken as well.
2 heads of lettuce, chopped
2 Granny Smith apples, diced small
3-4 pieces of cooked, cold, dark meat chicken (bone in or out), chopped
1/3 cup honey
1 tablespoon minced onion
1/2 cup oil
1/4 cup apple cider or red wine vinegar
2 tablespoons brown mustard
Mix dressing ingredients together and set aside.
Mix salad ingredients together, then toss with dressing.
If making chicken just for salad, either roast with just salt and pepper or with a teriyaki sauce.
