Applesauce Muffins


With just one cup of sugar and a quarter cup of oil, these muffins are whole-grain, heart-healthy, and most importantly delicious!


Prepare the Muffins

Yields 2 dozen

1. Line two 12-cup muffin tins. Blend together dry ingredients. Add eggs, chilled applesauce, and oil. Mix by hand until well blended. Stir in optional ingredients, if desired.
2. Spoon batter into lined muffin tins. Let stand 10 minutes. Bake at 350 degrees Fahrenheit for 20 minutes or until muffins begin to turn golden brown. Do not over-bake. Keep refrigerated, if not using right away.


Freezes well, but better fresh. A great trick with muffins (cookies, too!) is to stick them into the microwave for 15 seconds. Even if they are days old or out of the freezer, they’ll taste fresh-out-of-the-oven.
