I’m always experimenting with new flavor profiles for basic dinner options. Fish is often seasoned in a savory, mildly spicy manner. I had a jar of natural apricot jam in the pantry, and I thought, Why not use it on fish fillets? I pulled out a few other ingredients and this recipe came together. Different? Yes. Delicious? Yes. Serve with grilled sweet potato sticks or rice and a fresh salad.
3 tilapia fillets (or other white fish fillet)
3–4 tablespoons Tuscanini Apricot Fruit Spread or a natural apricot jam (depending on how sweet you like it)
1 clove garlic, sliced
1 and 1/2 teaspoons soy sauce
1 teaspoon olive oil
1 teaspoon Manischewitz Honey
1 teaspoon Dijon mustard
pinch salt
Preheat oven to broil. Line a pan with Gefen Parchment Paper and spray with olive oil spray.
Rinse fillets and pat dry. Lay in the pan. Combine remaining ingredients together in a small bowl, mixing well. Smear half the sauce on the fish fillets, reserving the rest.
Place the pan in the oven, but not too close to the heating element. Broil for seven to eight minutes. Flip the fillets over, smear with remaining sauce, and broil for another seven to eight minutes or until done (if your fillet is very thin, you may need less time). Remove from oven.
