Diets Each component in this salad beautifully complements the other making it a winner of a salad for an elegant dairy meal.
1 bag arugula
1 large carrot, peeled and shaved into ribbons
1 red onion, thinly sliced
1 avocado, cubed
4 slices mozzarella, cut into cubes
1/2 cup toasted sliced almonds
2 and 1/2 tablespoons Gefen Lemon Juice
3 tablespoons Gefen Olive Oil
2 teaspoons Gefen Honey
1/4 teaspoon mustard
1/4 teaspoon salt
1 clove garlic, crushed or 1 cube Gefen Frozen Garlic
1/2 teaspoon Pereg Black Pepper
In a small bowl, whisk together all dressing ingredients until smooth.
In a medium bowl, combine arugula, carrot ribbons, onion, avocado, mozzarella, and almonds.
Pour dressing over the salad and toss lightly. Serve immediately to enjoy the crisp, fresh flavors.
