Diets These adorable tacos are filled with a hearty vegetable mix in your favorite Asian flavors. Top with cheese and crisp fried onions. These are always a hit.
Yields many small tacos
1 eggplant, peeled and diced
2 zucchini, diced
1 red onion, diced
2 red peppers, diced
1 tablespoon Haddar Teriyaki Sauce
1 tablespoon sweet chili sauce
1 tablespoon silan, such as Heaven & Earth Date Syrup
1 tablespoon crushed garlic or 3 cubes Gefen Frozen Garlic
fried taco shells
fried onions
Grease a large sauté pan. Add vegetables and sauté until soft and vegetables come together to form a cohesive mixture. Mix in teriyaki sauce, sweet chili sauce, silan, and garlic.
Add vegetable mixture to taco shells. Top with feta cheese and fried onions.
