Diets Submitted by Avigayil K., Spring Valley, NY
This recipe is from my aunt who passed away a couple of months ago after being sick for a few years. These muffins remind me of her; they’re comforting and simple yet make everyone smile. My aunt was so easy and fun to talk to. She loved sharing recipes and had an amazing sense of humor. We all miss her very much, and every time we make these muffins, we feel
her hugging us one more time.
Yields 12 large muffins
3 bananas, mashed
1 and 1/2 cups Glicks Flour
1 cup sugar
1/2 cup oil, such as Manischewitz Grapeseed Oil
1 egg
1 teaspoon baking soda
1–2 teaspoons vanilla extract
1/2 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Mix all ingredients in an electric mixer.
Pour into a muffin pan. Bake for 25–30 minutes, or until muffins start getting brown on top.
