Diets I love the pairing of the avocado dressing with broccoli! It’s something new and different, and it tastes great. Feel free to use a 50/50 mix of freshly chopped cauliflower and broccoli as opposed to just broccoli.
1 avocado
1/4 cup Gefen Mayonnaise
1/2 teaspoon Tuscanini Lemon Juice
1/2 teaspoon Manischewitz Kosher Salt
1/8 teaspoon black pepper
1 pound chopped fresh broccoli
1 cup red grapes, halved
2/3 cup almonds
1 small red onion, diced (optional)
Place all dressing ingredients in the bowl of a food processor. Blend until smooth and creamy. If necessary, adjust salt and pepper to taste.
To assemble salad, pour dressing over broccoli and toss to combine evenly (this can be done a day in advance).
Arrange almonds around the edge of the serving bowl, and sprinkle the grapes (and onion, if using) in the middle.
