Yield: 16 ounces
1 ripe avocado, peeled and pit removed
3/4 cup water
1/4 cup wine, such as Baron Herzog Pinot Grigio (or water, if you don’t want the wine flavor)
3 tablespoons Gefen Lemon Juice or lime
1/2 teaspoon Gefen Salt
In a blender or food processor, blend avocado, water, wine, lemon juice, and salt until creamy. Add extra water, a bit at a time, if the dressing is too thick.
Transfer to a jar and store in the refrigerator.
